Sausage and Swiss Frittata

Sausage and Swiss Frittata

Ingredients

1/2lb.  sausage, crumbled into small pieces 
1/2cup  coarsely chopped green pepper 
1/2cup  coarsely chopped onion 
1clove garlic, minced 
1/2tsp.  dried thyme, crushed 
1/2tsp.  salt 
8eggs, slightly beaten 
2medium tomatoes, sliced 
1/2cup  shredded Swiss cheese 

Directions

Preheat oven to 450°F. In 12-inch nonstick skillet, brown sausage over medium heat. Add green pepper, onion and, garlic and cook until green pepper is tender. Stir in thyme and salt
Add eggs and cook until almost set, about 4 minutes
Arrange tomatoes on top and sprinkle with cheese. Wrap handle with foil. Bake until set, about 5 minutes
